Dehydrated Zucchini is an excellent source of Potassium, Folate, and Vitamins A and C.
This zucchini can be added to soups, stews, chilis, sauces, casseroles, Italian dishes, stuffing mixes, and bread. Add them directly to the dish while cooking. Alternatively, you can hydrate them in water for 10 minutes, then simmer.
1 oz equals to 1/3 cup of dehydrated zucchini. Once rehydrated, they double in volume.
